The word mezcal comes from Nahuatl mexcalli[ metl (maguey) and ixcalli (cooked) which means "oven-cooked agave“.
Is a traditional mexican alcoholic beverage, its produced mainly in Oaxaca and is made through distillation of agave (except blue agave).

ORIGINS
THE WORLD's CAPITAL OF MEZCAL
Mexcal is originaly from Santiago Matatlán Oaxaca in the south of Mexico.
Tequila is mostly produced in Jalisco, Mexico.

PROCESS
In Baltiko Spirits we use exclusively maguey ESPADIN. Its knowledge creates in autoclaves and is grounded through a mechanic tear machine.
Fermentation process in food grade stainless steel cilindric recipients.
Finally, distillation through steel still using gas.
The use of Baltiko Spirits´s technology places us in an excelent level in the mexican production of mezcal, also based on rised quality standars in each or our processes.
Tequila is not normaly 100% agave, because it absorbes up to 49% of other carbs and chemicals to be considered a good tequila.

AGAVE
Mezcal is made off agave Angustifolia Haw, it has more sugar and its biger. Mainly produced in Oaxaca state.
Tequilana Weber is blue agave used for the production of Tequila.
